Preparation
1. Cut chicken into small pieces.

2. Blend marinade ingredients in a large bowl, massage chicken pieces in the mixture, and cover and place in the refrigerator for one hour or overnight for maximum effect.

3. Add oil then butter to a warm pan. Once the butter has melted sauté onions, add tomatoes and salt.

4. Once tomatoes and onions have a soft consistency, add red chili powder, garam masala, cashew nuts, and coriander powder.

5. Place gravy in a blender till it forms a smooth puree that forms the base of the sauce (the sauce can also be prepared ahead of time along with the marinade).

6. Add more butter and warm the pan again. Add the remaining ingredients for the sauce and fry.

7. Place chicken cubes into the sautéed mixture on a medium-high and stir until soft and the mixture dries up.

8. Add puree into the pan along with a small amount of water to create a good gravy consistency.

9. Simmer till chicken pieces are fully cooked.

* 1-2 tsp organic greek yogurt
* 3/4 tsp garam masala powder
* 1/4 tsp turmeric powder
* 1 tsp ginger garlic paste
* 1.2 tsp red chili powder

* 1 1/2 cups fully chopped red tomatoes
* 10 pieces cashew nuts
* 1 tbsp unsalted Kerrygold butter
* 1 cup fully chopped white onions
* 1 bay leaf
* 1 cinnamon stick
* 3 cloves garlic, minced
* 1 1/2 tsp. ginger garlic paste
* 3 pcs. green cardamom
* 1 tsp coriander powder
